Grape variety: Nebbiolo from Barolo.
Wine making: our best pomace, the grape skins after pressing Nebbiolo for the production of Barolo, are distilled in a traditional way. The alembic operates in a discontinuous cycle: there is a loading phase of the alembic and a subsequent discharge of the exhausted pomace and the process is repeated to have a high quality product. The grappa is refined in oak wood from which it derives its amber color.
